Great GF alternative flour
If you are celiac & cannot tolerate nut/coconut flours, cassava is a great alternative. I like that Otto's makes their products from the entire yuca root, rather than being peeled (which makes other brands taste a bit different). So yes, their flour is pricier compared to similar brands, but you will get yummier results with this. There are multiple recipes online (I personally enjoy making chocolate chip pancakes) as well as info on how to use cassava when converting ratios from different flours. Depending on how much you use, each bag should last a few weeks at least (you can get approximately 28 1/4 cup servings in each). Recommended, especially when you can get a bulk discount.

Love this flour!
If you don't make anything else and are eating gluten/grain free, make the tortillas! Spend the 15 or 20 bucks and get a cast iron tortilla press, too, it makes it so much faster and more consistent in size and shape than rolling them out. Recipe is on the back of the bag, it's the best sub for soft tortillas I've ever tried, and they actually hold together. The flavor might take a little getting used to, it's really not that weird, but if you're expecting it to taste and behave exactly like wheat flour, it doesn't, but it's grown on me. I use it in cobbler/fruit crisp recipes to replace any flour, as well, and it's got a different texture, but funny thing is after a night in the fridge, you almost wouldn't know the difference.

Very very good Flour alternative to wheat flour for almost all your baking needs.
Love this Cassava Flour, it works almost as perfect as Wheat flour which i am trying to replace completely. This product is a bit overpriced on here. The Flour itself gets 5 stars, but the price on amazon for it definitely does not deserve the extra star.

The best substitute flour
I absolutely love this flour. I’m grain and gluten sensitive and you can substitute this for regular flours at the same ratio. Otto’s has a website with great recipes as well as Pinterest. It has no aftertaste. I tend to add extra salt to help give more flavor plus help the breads to rise.

The BEST GF flour:)
Since adopting Paleo life style, I've tried different types of GF flour but non compares to the great tasting of Cassava flour! Makes nice & crisp crackers & pizza crust; best of all the flour can absorb any kind of seasonings to produce excellent tasty treats. It costs a pretty penny but well worth it:)

The aftertaste is like Straw :(
For years I've been buying Cassava flour from the African market and I recently ran across a recipe that inspired me to try Otto's thinking there might be difference in flour: Super fluffy Cassava Waffles. I first made them with African Cassava flour and they were yummy. The next time, I made them with Otto's and they had an aftertaste like straw. Unfortunately, the flour is not returnable -- even the unopened bag.So I'M stuck with two pounds of Otto's flour :(No more testing for me; I'M hooked on Cassava flour from the African market. If I had to describe the aftertaste of African Cassava, I'd say mildly sweet -- no taste in particular. Otto's aftertaste: straw.

Great GF / Paleo product
Great GF / Paleo product. It is my #1 wheat flour replacement for baking and thickening. Use it recently to thicken the apple pie filling at Thanksgiving, with no doughy taste and it thickened well. Works great with almond flours and coconut flours to lighten the backing product.

I like this - I will continue to get it
I like this - I will continue to get it. However, the idea that you can use your normal recipes and just substitute this for regular flour is probably stretching it for most things. Yes, they'll still bake and look the same, but there is a weird dryness in the ones I've tried. However, for this past Christmas, I used my normal Christmas cookie recipes and used half this flour and half almond flour, and in the words of my youngest daughter, "You nailed it, Mom." I didn't just want an acceptable grain free cookie. I wanted them to taste like they always have. Using half Otto's Cassava Flour and half fine ground almond flour, and no one could really tell the difference.
